I am starting to get excited about the Whole Life Challenge starting in September (and if you’d like to join you have until tomorrow to sign up with early bird rates!) and I’m re-visiting some of the recipes I loved the first time around. This one is compliant if you are doing the Kickstart or Lifestyle nutrition program but if you are doing Performance, just substitute the cottage cheese for a ripe banana and you are good to go!

1/2 cup of Cottage Cheese
1/2 cup of Rolled Oats
4 Egg Whites

Blend all ingredients together to form your batter and then cook as you normally would on your pan. You can use butter or oil of your choice for frying, but I have a non-stick pan so I went without.

I went with greek yoghurt, frozen raspberries and honey – but you could use anything you like

This makes 4 pancakes, which is 2 serves for me!
